Peanut Butter Chocolate Protein Bars These. Are. Amazing.
A healthy alternative (that doesn't taste healthy AT ALL) to your store-bought protein bar. Create these raw, vegan, bars and freeze them or keep them refrigerated for an on-the-go snack. These are GREAT for snacks for your kids, or you could even take a tray (cut small) to your next holiday or dinner party as a healthy dessert option!
Peanut Butter Chocolate Protein Bars
PREP. : 20 MINS. | MAKE: 15 MINS.
Set: 1 hour in the fridge if you make the topping, or 30 mins in the fridge without topping.
What you will need to make the bar base:

- Place dates in water and set aside.
- Blend together the oats, hemp seed, protein, cinnamon, and salt until combined and oats have turned to more of a flour texture.
- Mash the dates with the water to create a paste, combine with the maple syrup, melted coconut oil, and nut butter.
- Mix the two together and press evenly and firmly into a baking pan lined with parchment.
What you need
To make the chocolate topping (optional):
3 TBSP Coconut oil, melted
3 TBSP Cocoa or Cacao powder
3 TBSP vegan Chocolate chips
Combine the chocolate chips with the coconut oil until melted (you can do this in a pot on low on the stove or in the microwave oh high checking every 10 seconds). Mix in the cocoa or cacao and pour on top of bars. Set in the fridge for a minimum of one hour before slicing! Store in the fridge or freezer.
