Collagen Lemon Loaf | AURA Kitchen

You guys. This came out super moist and fluffy! We wanted a simple treat that wasn't packed with a ton of sugar. If you have a little more of a sweet tooth, we would recommend vanilla plant milk in the recipe... and you can also make your glaze a decadent as your heart desires.
What you need for today's Collagen Lemon Load recipe:
1/4 C melted vegan butter
1 C unsweetened coconut/almond milk
1/2 C fresh lemon juice (option to add lemon zest from the peel)
1 TSP vanilla extract
1 TBSP AURA Collagen Generator
1 C sugar (we used 1/2 monk fruit and 1/2 coconut)
1 TSP baking soda
1.5 TSP baking powder
2 1/4 all-purpose flour
What to do:
- Grab one medium bowl, mix melted butter, milk, lemon juice and vanilla.
- Add/mix sugar, then baking soda and baking powder.
- Add/mix the flour until the batter is smooth.
- Pour batter into a loaf pan (use vegan butter or coconut oil to grease pan), bake at 375 degrees for 45 mins. Let cool for 10 minutes and enjoy!
We mixed a bunch of stuff together.... and it turned out GREAT. Coconut milk, half juiced lemon, AURA MCT, AURA Vanilla Plant Based Protein, a little powdered sugar and a dash of cocoa. Adjust the powders and liquid based on your desired consistency and sweetness. We went for more of a drizzle!
