AURA Plant Based Lunch Recipe

This plant-based lunch took 10 minutes to make and is the perfect balance of healthy fats, protein, and complex carbs.

Replace your afternoon coffee with:

1/2 C coconut water
1/2 C water

Today's lunch feature:

@solcuisine Vegan Sunflower Beet Burger
2.5 C raw kale, broccoli, cabbage and Brussels
2 TBSP salsa
1 TBSP @bragglivefoodproducts all-purpose soy seasoning
2 TBSP @bobsredmill nutritional yeast
1 TSP avocado oil
1/4 C water
Basil, salt, pepper

How to make:

  1. Fry burger in a pan with avocado oil until slightly crispy on both sides. Top burger with salsa, basil, and spices.
  2. Sauté raw veg in water, soy seasoning and nutritional yeast (the liquids will turn into a lovely sauce). Add more spices if you wish! We squeezed some fresh lemon for a burst of citrus.
  3. P.S. Sol Burgers are packed with Iron, Fibre, and Protein! We love them.
